Coconut Popcorn
We absolutely love popcorn! Especially on those gloomy, rainy days when all you want to do is curl up on the sofa with a good book… Time for comfort food in the form of a delicious snack!
It’s super easy: a standard bag of unsalted popcorn kernels, a little Royal Green Extra Virgin Coconut Oil for a subtle coconut flavour, or Odourless Coconut Oil if you prefer classic popcorn.
Then sprinkle over a pinch of Royal Green Coconut Blossom Sugar… and ta-da! You’ll have lightly sweet, irresistible popcorn that melts in your mouth.
Why coconut blossom sugar? Because it’s a natural, mineral-rich sweetener that causes less of a spike in your blood sugar than regular sugar. And that soft, caramel-like flavour? Pure magic!

125 g unsalted popcorn kernels
2 tablespoons Royal Green Extra Virgin Coconut Oil
2 tablespoons Royal Green Coconut Blossom Sugar
2 teaspoons cinnamon
Optional:
A pinch of vanilla extract
A small pinch of sea salt (to enhance the flavour)
Heat the oil
Add the coconut oil to a large, heavy-based pan and heat over a medium heat until melted.
Pop the popcorn
Add the popcorn kernels and cover the pan with a lid. Shake regularly or gently move the pan so the kernels pop evenly. Remove from the heat once the popping slows down.
Make the coating
In a small pan, combine the coconut blossom sugar and cinnamon with a teaspoon of coconut oil. Heat briefly until the sugar starts to melt slightly. Add the vanilla extract if using.
Combine and mix
Pour the warm sugar-cinnamon mixture over the popcorn. Gently toss until all the popcorn is evenly coated. Add a pinch of sea salt if desired to balance the sweetness.
Cool for perfect crunch
Spread the popcorn over a baking tray lined with baking paper and allow it to cool for 2–3 minutes. This keeps the popcorn light and prevents it from sticking together.
